Food Waste Being Discarded - A Deep Fryer Frying Fried FoodWater Quality Practices for Restaurants

  • Be sure that all wash water drains to the sanitary sewer system - not a storm drain.
  • Be sure to store grease in covered containers designed for that purpose.
  • Clean up all outdoor spills immediately using rags, kitty litter, or other absorbent material and then dispose of properly.
  • Do not place grease rendering drums near any storm drain.
  • Dumpsters should be placed in a covered area to prevent stormwater from entering them.
  • If it's necessary to clean equipment out of doors, be sure to collect wash water and dispose of it in indoor sinks or drains that discharge to the sanitary sewer system.
  • If you must mop up a spill, rinse mop and dispose of wash water in indoor sinks that discharge to the sanitary sewer system.
  • Keep all storm drains clear.
  • Know where the spill containment kit is located in the event of a spill. Store kits in a convenient location.
  • Make sure that you have a sufficient number of trash receptacles for employees and customers.
  • Make sure that your dumpsters are secure. Inspect them often and repair leaks that may occur.
  • Never put any waste products or food wastes in the storm drains.
  • Pick up litter every day, keeping parking lots and other paved areas clean of debris.
  • Recycle grease or dispose of it at an appropriate landfill.
